DEFINITION Octenyl succinic acid modified gum arabic is produced by esterifying gum arabic (Acacia seyal), or gum arabic (Acacia senegal) in
aqueous solution with not more than 3% of octenyl succinic acid anhydride. It is subsequently spray dried.
