DEFINITION Glucono-delta-lactone is the cyclic 1,5-intramolecular ester of D-gluconic acid. In aqueous media it is hydrolyzed to an equilibrium mixture of Dgluconic acid (55-66%) and the delta- and gamma-lactones.
