(a) By polarization.—Pipet, into evaporating dish, volume of test portion equivalent to 52 g as calculated from specific gravity, 945.06C (see 26.1.06), and exactly neutralize with1MNaOH calculating amount required from acidity, 940.15A (see 26.2.14). Evaporate on steam bath to remove alcohol, transfer to 200 mL volumetric flask, and proceed as in 925.47B (see 44.1.08) or 925.48 (see 44.1.09), beginning “…add necessary clarifying agent,…” in 925.47B(a) (see 44.1.08).
(b) By reducing sugars before and after inversion.—Approximate sugar content of test portion from total solids, 940.09 (see 26.2.08), and pipet test portion containing 5–7 g sugars into porcelain dish; exactly neutralize with 1M NaOH solution, calculating amount required from acidity, 940.15A (see 26.2.14), and evaporate on steam bath to remove alcohol. Transfer to 200 mL volumetric flask, clarify with neutral Pb(CH3COO)2 solution, 925.46B(d) (see44.1.07), remove excess Pb with potassium oxalate, and proceed as in 930.36 (see 44.1.13), using 906.03«B (see 44.1.16) for determination
of reducing sugars.
