According to the United States Department of Agriculture, American potato consumption fell from 48.6 lbs to 37.2 lbs per person between 2000 and 2009, while per capita consumption of sweet potatoes increased from 3.8 lbs to 4.7 lbs over the same period (Foreign Agricultural Service, 2011).
