Eggs - AMERICAN EATING TRENDS REPORT
-According to the United States (U.S.) Department of Agriculture, per capita egg and egg products consumption in the U.S. was approximately 250 eggs per person in 2009 (Economic Research Service, 2011).
In 2010, a salmonella outbreak at two American farms caused consumer demand for eggs to drop. Egg consumption has since rebounded. In 2011, eggs in the U.S. had a market volume of close to 4.4 million tonnes, up from around 4.3 million tonnes in 2010 (Euromonitor International, 2012).
Core Markets (at least 20% above average consumption rate)
Adults over 65 years, particularly males;
Adults over 55 years of age, both male and female;
The non-white population, including Black, Hispanic, and Other;
Households with income lower than US$19,000;
Households with more than five members; and
Adults and children on a diet.
